Enchanted Fig Tree Dining: A transformation of island flavours

From fig sap to cheese, sour figs into sweet – The Enchanted Fig Tree’s chef Stephanie Vass transforms local Kangaroo Island produce into extraordinary flavours and textures that you would least expect.

The Enchanted Fig Tree is an extraordinary dining location, set inside a 120-year-old living fig tree. It started its life in an idyllic seaside location behind the sand dunes of Snelling beach, on the north coast of Kangaroo Island. Over the years, its gnarly branches and dinner plate sized leaves have grown into an impressive canopy that is now over two stories high.

Inside its dome, dining rooms have naturally formed over the years creating space for up to forty-five people to dine…

Like a fairy tale folly found amongst the pages of an Enid Blyton book, The Enchanted Fig Tree creates a sense of wonder and magic as the sun shines through the shimmering leaves and the bud lights sparkle in the shadows.

It’s a special place, unequalled anywhere else in the world…

One of the key people behind the fig trees unique style of magic, is chef Stephanie Vass who brings her own style of menu creativity and flavours combinations to the dining menu this year.  Working with the island best local produce, Stephanie has an extraordinary talent for transforming ingredients into flavours and taste sensations that you would never expect.

“As Rumpelstiltskin turned straw into gold, Stephanie turns fig leaves into gold dust, fig sap into cheese, and can even transform a sour green fig into succulent sweet delight overnight.”

As a storyteller, Stephanie’s menu for the start of the season is inspired by native and foraged foods from the local area and ingredients once used by the island settlers. Even a high tea classic that was once enjoyed by the original property owners Sir James and Lady Prue Holden over a spot of Croquet has found its place in her menu.

If you are looking for an evening dinner set amongst the stars, The Enchanted Fig Tree open’s under a spectacular display of solar lighting inspired by the colours and the sparkle of the southern stars and universe. Dinners are open for a limited time on Friday and Saturday nights from 6th – 28th January 2023.
