Overnight oats with almonds, dates & spiced oranges

Start your day with this fresh, citrusy breakfast that's easy to make and feels like a special treat.

Overnight oats with almonds, dates & spiced oranges
serves 4

1 cup rolled oats
2 cups almond milk, plus extra to serve
½ cup almonds, toasted and roughly chopped
8 medjool dates, roughly chopped
4 heaped tbsp Greek yoghurt

for spiced oranges
2 oranges
orange juice
½ cup honey
1 cinnamon stick
2 cardamom pods, bruised

Place oats and almond milk in a medium bowl, stir to combine, cover and refrigerate overnight. Segment the oranges and squeeze out juice from remaining membrane, adding extra orange juice to make up one cup. Place juice into a small saucepan with honey and spices, bring to boil then simmer until thick and syrupy. Allow to cool before pouring over orange segments.

To serve, fold almonds and dates through oats (loosening with extra almond milk if desired). Place a spoonful of oranges at base of a bowl or jar, top with oats followed by another spoonful of oranges. Finish with a dollop of yoghurt and a drizzle of syrup.
