Recipe: Vegetarian power bowl

Preparing delicious, healthy food doesn’t have to be stressful or time consuming. This fresh, colourful bowl will keep everyone's belly happy.

Vegetarian power bowl
Serves 2
Cook time: 5 minutes 

150g soba noodles (dried)
1 cup edamame beans, shelled

slaw
1 carrot, sliced into thin strips
1 cucumber, sliced into thin strips
¼ small red cabbage, sliced into thin strips
2-3 large mint leaves, roughly chopped
2-3 sprigs of fresh coriander, roughly chopped
½ small red capsicum, sliced into thin strips

dressing
1 tbsp sesame oil
2 tbsp soy sauce
pinch of chilli flakes
½ lime, juiced
1 tbsp fresh coriander, chopped

Cook soba noodles according to packet instructions. Set aside. In a small bowl, add all dressing ingredients, mix and set aside. In two serving bowls, divide the slaw, edamame and soba noodles.

Pour over dressing and serve.
